1 large can refried beans (29 oz)
1 lb hamburger browned with onion, salt & pepper
1 pint sour cream
Taco seasoning
2-4 cups Shredded cheddar cheese
Tortilla chips
Spread refried beans in a jelly roll pan. Heat them in the oven at 350 degrees for about 10 minutes. You are just warming them up. Remove from oven and evenly sprinkle with the browned hamburger. Sprinkle the sour cream with taco seasoning to taste. I don't like a lot of the taco seasoning... I probably use 1/4 of the packet. So start out with a little. You can always add more. Drop the seasoned sour cream onto the hamburger and spread as much as you can. You can use more sour cream too. Sprinkle top with cheddar cheese. I like a lot of cheese but you can adjust according to your taste. We like mild but can use whatever you have. Colby/Jack works well too. Return to oven just until cheese melts. Serve with tortilla chips. Nacho cheese Doritos are our favorite! You could also top with diced tomatoes, olives or anything else you would put on nachos. This was one of our favorite meals when our kids were growing up. Enjoy!

Chili Cream Cheese Dip
1 (8 oz) softened cream cheese
1 (14 oz) can chili (no beans)
Heat together and stir. This is delicious with Nacho cheese Doritos!

Grandma Berlin's Salsa
Salsa
Peel tomatoes in a big pan:
2 1/2 Blenders full (16 cups). Chop till desired consistency.
2 1/2 Large onions - chopped in food processor
3 Large green peppers - chopped
3 or 5 jalapeno peppers - chopped
1 long Anaheim red pepper
2 Tablespoons canning salt
2 Tablespoons sugar
1 pinch dried hot chili peppers
Bring to a boil and boil 2 hours (taste for salt). Cook until desired consistency.
Pour into pint jars. Process 15 minutes. Serve heated with tortilla chips.
Makes 7 pints.
Mom got this recipe from a friend in Ogden years ago. Don't forget to use disposable gloves for even the tomatoes...otherwise you have orange fingernails for a few days.

Homemade Tartar Sauce
"The very best I have ever tried! A quick and easy tartar sauce that's great for any and all seafood Make well in advance of serving to make sure that all of the flavors have a chance to adhere to one another."
Ingredients:
1 cup mayonnaise
1 Tbs. lemon juice
1/4 cup diced onion (or 2 Tbs. dry minced onion, reconstituted)
1/4 cup finely chopped dill pickle
Directions:
In a stainless steel or glass mixing bowl, combine the mayonnaise, lemon juice, onion, and dill pickle. Mix thoroughly. Transfer to a glass or plastic container with a tight lid and refrigerate. Serve with Unbelievable Battered Fish!

Pumpkin Fluff Dip
1 (16 oz. ) can pumpkin (solid pack)
1 (3 oz.) vanilla pudding (dry)
1 (12 oz.) cool whip
1 tsp. pumpkin pie spice
Mix together. Serve with Ginger Snaps, Graham Cracker Sticks, apples,bananas, etc.

Jazz Pizzazz Dip
1 (8 oz.) cream cheese softened
1 (16 oz.)chili
1 (14 oz.) salsa
1 lb. grated cheddar cheese
In 8x8 baking dish, spread softened cream cheese evenly. Layer, chili, salsa and cheese over cream cheese. Microwave until cheese melts and layers are heated through... approx. 2-3 minutes depending on your microwave. Serve with Fritos scoops.
Optional: top with diced tomatoes and sliced olives
We love this dip!!!

Shrimp Platter Appetizer
1 (8 oz.) cream cheese softened
1/2 c. sour cream
1/4 c. mayonnaise
2 cans broken or tiny shrimp, drained & rinsed
1 c. (or less) seafood cocktail sauce
2 c. shredded mozzarella cheese
Combine cream cheese, sour cream and mayo. Spread on a 12 inch plate. Scatter shrimp over the cheese layer. Spread cocktail sauce over shrimp. Cover entire plate with cheese. Serve immediately with crackers.
This is a great appetizer. We always have it during the holidays... The only thing I do differently is that I just squeeze the cocktail sauce right out of the container fairly evenly over the shrimp. I probably only use 1/4-1/2 cup. I don't like the cocktail sauce to be too overpowering. It is fantastic with wheat thins or town house crackers!

1 can small deveined shrimp, drained
Blend ingredients with hand mixer. Serve with potato chips or crackers.
The cans of tiny shrimp work just fine in this recipe too and they are usually less expensive.

1/2 red onion chopped
1/4 yellow onion chopped
1 clove garlic minced
1 anaheim pepper (ribs removed) diced
1-2 limes
kosher salt to taste
black pepper to taste
1-2 drizzles of extra virgin olive oil
Pulse all ingredients in food processor except tomato juice. If salsa is too thick, add a little tomato juice. Cover and set aside allowing the flavors to mingle. Serve with chips etc...

Fiesta Salad/Salsa
1 Jalapeno seeded and minced fine
2 sm. cans diced tomatoes (15 oz.) or 4 tomatoes
1 red bell pepper seeded and diced
1 can blacked beans (rinsed)
1 c. frozen corn
3 green onions chopped
1/2 c. cilantro chopped (optional)
2-3 avocados diced
Dressing:
1/3 c. lime juice
1/4 c. olive oil
1 clove garlic minced
1/8 tsp. cayenne pepper
1 tsp. salt
Drain tomatoes and black beans in strainer. In a medium sized bowl add corn, bell pepper, green onions, cilantro, jalapeno and avocado. Mix the dressing ingredients together and pour over bean, corn, tomato mixture. Mix to blend flavors.
We love this with chips. I love it with cilantro but there are a couple of guys in our family who don't like cilantro and it is great either way. I always use the canned tomatoes. There is enough chopping to do without the tomatoes:) I got this recipe from a friend of mine. Loralee Reary and I worked in YW together. So we planned a cooking night with our girls and Michael showed them how to make chicken taquitos. Loralee brought this salsa and it was so good! Now everytime we make the chicken taquitos, we make this too!

Texas Caviar
Put in large bowl:
1 can white corn
1 can yellow corn
1 can black beans
3 cans mild Rotel
2 avocados sliced in pieces
1 bunch cilantro chopped
1 bunch green onions chopped
mix together:

1/4 cup vinegar
3 Tbs. water
add to bowl
eat with chips
