Mix together.
2 cups frozen corn thawed (or 2 cans corn drained)
2 pounds grated cheddar cheese (or cheese blend)
1 1/2 packages regular Fritos
1/2 of a medium onion, diced

Sheet Pan Nachos
1 large can refried beans (29 oz)
1 lb hamburger browned with onion, salt & pepper
1 pint sour cream
Taco seasoning
2-4 cups Shredded cheddar cheese
Tortilla chips
Spread refried beans in a jelly roll pan. Heat them in the oven at 350 degrees for about 10 minutes. You are just warming them up. Remove from oven and evenly sprinkle with the browned hamburger. Sprinkle the sour cream with taco seasoning to taste. I don't like a lot of the taco seasoning... I probably use 1/4 of the packet. So start out with a little. You can always add more. Drop the seasoned sour cream onto the hamburger and spread as much as you can. You can use more sour cream too. Sprinkle top with cheddar cheese. I like a lot of cheese but you can adjust according to your taste. We like mild but can use whatever you have. Colby/Jack works well too. Return to oven just until cheese melts. Serve with tortilla chips. Nacho cheese Doritos are our favorite! You could also top with diced tomatoes, olives or anything else you would put on nachos. This was one of our favorite meals when our kids were growing up. Enjoy!

Chili Cream Cheese Dip
1 (8 oz) softened cream cheese
1 (14 oz) can chili (no beans)
Heat together and stir. This is delicious with Nacho cheese Doritos!

5 slices bacon crumbled
4 sliced green onions
1 dash dill weed
1 sprinkle pepper
1/2 cup chopped nuts (inside)
1/2 cups nuts (outside)
Mix cream cheese and mayo until smooth. Add in rest of ingredients except for the 1/2 cup of nuts for the outside of the cheeseball. Form into a ball and roll in remaining nuts. Chill. Serve with crackers. Almonds or pecans work well in this cheeseball.

Pineapple cheese ball
2 (8 oz.) pkg. cream cheese (softened)
1 (8 and 3/4 oz.) crushed pineapple (drained) 1/4 c. chopped bell pepper 2 tbsp. chopped onion 1 tbsp. seasoned salt 1 to 2 c. chopped pecans (add half to cheese ball and roll ball in remainder)
Mix cream cheese, pineapple, bell pepper, onion, salt and pecans. Roll in remaining chopped pecans. Refrigerate to allow flavors to blend.

Cheese Ball

Shrimp Scampi
1 lb. peeled raw shrimp (it's fine if it's frozen)
1/2 cube salted butter
2 cloves garlic
1 tsp. dried chives
Fresh cracked pepper
Heat butter in skillet with whole garlic cloves for several minutes to infuse butter with garlic. Remove garlic and add shrimp. Sprinkle with cracked pepper and let cook for a couple of minutes til shrimp turns pink. Using tongs, turn shrimp over to cook on the other side. Sprinkle with chives. Remove when shrimp is cooked through (no longer transparent). Serve immediately.

Bean Dip
1 large can (or 2 small cans) Rosarita Spicy Jalepeno Beans
Put in microwave bowl and cover with cheese.
Heat in microwave for 2 minutes or until cheese is melted.
Add one spoonful of sour cream.
Add one small dump (spoonful) of El Pato Spicy Tomato Sauce.
Mix thoroughly and taste. Add more El Pato if not spicy enough or more sour cream to mellow.
When you like the taste, microwave for another 1 1/2 minutes.
Stir and serve with chips.
Our neighbors (the Squires) made this for just about every Scout camp their boys went on with Brian. The spicier, the better at camp! We love it at home, too !

Salsa

3 Tbl. canned diced jalapenos
1 Tbl. lime juice
1 tsp. salt
1/4 tsp. cumin
1/2 c. diced yellow or white onion
Combine all ingredients in food processor (or blender) Run on high speed for just a minute until it is nearly pureed. Be careful not to over-process. Stir well. Cover and chill overnight. Serve with chips.
We absolutely LOVE Chili's salsa... this recipe is the closest thing to it! Enjoy!!!

Strawberry Smoothie
1 can (11 oz.) mandarin oranges, drained
6 whole frozen strawberries
2 tsp. crystal light strawberry/orange/banana drink mix
3 tsp. vanilla
1 container light strawberry yoplait yogurt
3 c. crushed ice
1 can sprite zero
Blend until smooth. Makes at least 2 smoothies. You can also divide it into thirds. I love using the mandarin oranges... they are so versatile and blend up really well. I buy them by the case so I always have them on hand too.

Guacamole
3 ripe avacoados, peeledd
pitted and mashed
1 lime, juiced
1 tsp. salt
1/2 cup diced onion
3 tbsp. chopped cilantro
2 roma tomatoes, diced
1 tsp. minced garlic

In a medium bowl, mash together the avacados,
lime juice, and salt. Mix an onion, cilantro,
tomatoes, and garlic. Refrigerate for one hour.

pour into a pie pan. Bake at 400 degrees for 15 minutes, or until
bubbley and golden brown. You can use tortilla chips or toasted
bagette slices to dip with.

For the Flour Dredge:
1 1/2 cups flour
3 tsp. Lawry's seasoning salt (you can really season the flour with salt, pepper, etc...)
Dip chicken in egg mixture, then flour mixture. Repeat one more time. Then fry the chicken in 2-3 inches of hot oil.
Sauce:
2 cups brown sugar
1/3 cup FRANKS hot sauce (HAS to be Franks)
3 TB. corn syrup
½ cup apple cider vinegar
Boil for 1 minute...no longer. Sauce will thicken as it cools.

Coat fried chicken in sauce and let sit for a few minutes...enough to saturate the breading.
This is the recipe that won us (Brian, Brandy, Jeff, and myself) 1st place at the Berlin Family Reunion Chicken Cook-off!

Fruit Pizza
Ingredients
1 (18 ounce) package refrigerated sugar cookie dough
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping, thawed
Fruit of your choice, Anything will work really.
We Like Kiwi, Strawberries, Blueberries, Blackberries
The Glaze
1/2 cup white sugar
1 pinch salt
1 tablespoon cornstarch
1/2 cup orange juice
2 tablespoons lemon juice
1/4 cup water
1/2 teaspoon orange zest
Directions
Preheat oven to 350 degrees F (175 degrees C). Slice cookie dough and arrange on greased pizza pan, overlapping edges. Press dough flat into pan. Bake for 10 to 12 minutes. Allow to cool.
In a large bowl, soften cream cheese, then fold in the whipped topping. Spread over cooled crust. You can chill for a while at this point, or continue by arranging the fruit.
Begin with strawberries, sliced in half. Arrange in a circle around the outside edge. Continue with fruit of your choice, working towards the middle. If bananas are used, dip them in lemon juice so they don't darken. Then make a sauce to spoon over fruit.
In a saucepan, combine sugar, salt, corn starch, orange juice, lemon juice and water. Cook and stir over medium heat. Bring to a boil, and cook for 1 or 2 minutes, until thickened. Remove from heat, and add grated orange rind. Allow to cool, but not set up. Spoon over fruit. Chill for two hours, then cut into wedges and serve.

2 1/2 Blenders full (16 cups). Chop till desired consistency.
2 1/2 Large onions - chopped in food processor
3 Large green peppers - chopped
3 or 5 jalapeno peppers - chopped
1 long Anaheim red pepper
2 Tablespoons canning salt
2 Tablespoons sugar
1 pinch dried hot chili peppers
Bring to a boil and boil 2 hours (taste for salt). Cook until desired consistency.
Pour into pint jars. Process 15 minutes. Serve heated with tortilla chips.
Makes 7 pints.
Mom got this recipe from a friend in Ogden years ago. Don't forget to use disposable gloves for even the tomatoes...otherwise you have orange fingernails for a few days.

Quiche
Brush 1 frozen pie crust with frothy egg white. Bake crust at 400° for 7 minutes (do not prick crust).
1/2 c. cubed ham
1/4 cube butter or margarine
1/3 c. finely chopped onion
1 small can mushrooms
Fry the above ingredients in skillet until onion is tender.
Whisk:
4 eggs
1 c. half & half
1/2 tsp. salt
1/2 tsp. lemon pepper
Don't overbeat eggs. Sprinkle 1 cup shredded swiss cheese in bottom of baked crust. Add ham mixture, then egg mixture. Sprinkle with nutmeg (optional... I have never used the nutmeg). Reduce oven heat to 375° and bake for approx. 35 min. or until knife comes out clean.
I got this recipe from Grandma Berlin when my kids were little. It is a favorite in our family... by far the best Quiche I have ever had! When we were in St. George, Brian mentioned how good it sounded but unfortunately, it wasn't on the blog so we couldn't make it:(. We have had it for dinner more times than for breakfast... we have even made it when we are camping in a dutch oven (you just have to use refrigerated pie crust instead of the frozen. Enjoy!

2 c. Bisquick
2/3 c. milk
1/2 c. shredded cheese
1/4 c. margarine, melted
1/2 tsp. garlic powder
Heat oven to 450 degrees. Combine Bisquick, milk, and cheese until a soft dough forms. Beat vigorously for 30 seconds. Drop dough by spoonfuls onto ungreased cookie sheet. Bake 8-10 minutes or until golden brown. Combine margarine and garlic powder. Brush over warm biscuits before removing from cookie sheet. Makes about 10 biscuits.

Mozzerella Sticks
String Cheese
Mix:
